Do you or your family make any special dishes for the holidays?

Ingredients

  • 1 box (3 oz) flavored gelatin mix (Orange, strawberry, or pineapple are classic choices)
  • 1 cup boiling water
  • 1 cup cold water (or reserved fruit juice plus water)
  • 1 (20 oz) can pineapple chunks (or tidbits), well-drained
  • 1 (15 oz) can mandarin oranges, well-drained
  • 1 cup miniature marshmallows
  • 1 cup sweetened shredded coconut
  • 1/2 cup maraschino cherries, halved and drained well (optional)
  • 1 cup whipped topping (e.g., Cool Whip), thawed
  • 1/2 cup sour cream or plain Greek yogurt (optional for a richer, tangier flavor)

Instructions

  1. Prepare the Gelatin Base: In a large bowl, dissolve the gelatin powder in the boiling water. Stir for at least 2 minutes until the crystals are completely dissolved.
  2. Add Cold Liquid: Stir in the cold water (or reserved fruit juice/water mixture).
  3. Chill until Partially Set: Refrigerate the liquid gelatin mixture for about 1 to 1.5 hours, or until it reaches a slightly thickened consistency (similar to unbeaten egg whites).
  4. Combine Creamy Base (Optional Step): If using sour cream, gently whisk or fold it into the slightly thickened gelatin until well combined. Then fold in the thawed whipped topping.
  5. Add Remaining Ingredients: Gently fold in the drained pineapple, mandarin oranges, marshmallows, coconut, and cherries (if using). Be gentle, especially with the mandarin oranges, to prevent them from breaking apart.
  6. Chill and Set: Cover the bowl and refrigerate for at least 2 to 4 hours, or preferably overnight, to allow the flavors to meld and the salad to set properly.
  7. Serve Chilled: Give the salad a gentle stir before serving. Garnish with extra cherries or coconut if desired.
